2/3 tablespoon bourbon
1 tablespoon green onions, minced
2/3 tablespoon maple syrup
1/3 tablespoon soy sauce, low sodium
1/3 tablespoon Dijon mustard
1-1/2 teaspoon black pepper
8 scallops, large
2 slices bacon 


Combine first 6 ingredients in a bowl, stir well.  Add scallops.  Marinate in refrigerator one hour, stirring occasionally.  Remove scallops, reserve marinade.  Cut each slice of bacon into 4 pieces.

Wrap 1 bacon piece around each scallop.  Bacon might only wrap halfway around scallop if they are very large.  Thread scallops onto 12-inch skewers, leaving some space so bacon will cook.  Place skewers on a broiler pan coated with cooking spray.  Broil 8 minutes or until bacon is crisp and scallops are done, basting with reserved marinade.
