EASY CHUCK ROAST IN FOIL

Ingredients:

1 (3 to 3-1/2 lb.)Chuck Roast
Olive Oil
1 packet LiptonOnion Soup Mix 

Directions:

Preheat oven to 300degrees F.  Place the roast on a largesheet of aluminum foil that has been set on a baking sheet with sides.  Rub a thin layer of olive oil over both sidesof the roast.  Sprinkle half of the soupmix packet on the top of the roast, half on the bottom.  This will act as a dry rub.  Bring the sides of the foil up and fold overto seal them, and then fold over the ends a few times to seal them too.  You will have a packet that should hold thejuice that will cook out the roast, but the baking sheet is essential as leaksdo occur.

Bake the roast for3-1/2 hours or until the meat is fall-apart tender.  If your roast is in the 3-1/2 to 4-poundrange, cook for approximately 4 hours. Remove the try from the oven and allow the roast to sit, in the packet,for 10 minutes (longer is fine).  Whenopening the foil packet, be careful of the hot steam that will escape.  Serve right from the foil or transfer themeat to a serving dish and pour the juices over the top.
